1 16-oz bag of frozen mixed veggies (I used a mixture of carrots, broccoli, green beans, and cauliflower.)
5 tablespoons natural peanut butter of your preferred consistency
some ginger, powdered or fresh or in a jar or whatever
some red pepper
1/4 cup boiling water



Put peanut butter in a heat-safe serving dish big enough to hold the veggies with some room to spare.
Add ginger to taste
Add red pepper to taste
Add boiling water. Smoosh about until the mixture is as homogenous as the native chunkiness of the peanut butter will allow. Taste and adjust seasonings as necessary

Prepare mixed veggies according to package directions or personal preference.

Combine.

Consume, with rice if you wish.

This sounds interesting! And I've never read a recipe that called for "smoosh"ing before. *bg* I like peanut butter, but never considered putting it on veggies before! Is it good?

It is good - if you like that sort of thing! (How's that for a conclusive answer, hm? *g*) I was trying to approximate the peanut dipping sauce for Thai satay (meat on skewers, if you've not had it.) Next time I make it I'm going to up the ginger a lot and try to come up with something to add some complexity to the hotness of the cayenne.
